Job purpose

The position is responsible for participating in the activities of assisting the Cost Controller in supervising the staff involved in receiving, storing and issuing hotel related items. Assist in providing information for cost control to ensure food, beverage and other contribution margins are consistently maximized with high standards of quality and service.

Basic Responsibilities

Assists in supervising, coordinating and participating in all activities of the Accounting Officer (Store) and Accounting Officer (Receiving) in controlling the food and beverage used in the hotel.
Assists in preparing accurate and timely operational reports (daily and monthly).
Reviews all postings and summarizes all relevant reports issued from the receiving departments, stores and other departments.
Coordinates with Group Procurement regarding deliveries and pending deliveries that do not conform to specifications.
– Assists in spot inspection of various kitchens and bars to prevent theft and overcrowding.
The Cost Controller assists in supervising the daily and monthly inventory.
– Helps maintain and update standard recipe on all menu items for Banquet and Restaurant.
– Inventory closing updates on the system.
Assists in analyzing cost ratios when needed.
Assists in receiving and issuing jobs when needed.
Ensures adherence to HACCP standards and requirements at all times.

Knowledge and experience

Diploma/Certificate holder in Accounting or equivalent.
– Being equipped with knowledge of beverages is an advantage.
Knowledge of POS system and inventory system (material control) is an advantage.
Strong working knowledge of Microsoft Excel will be an advantage.
At least 2-3 years related work experience in the same capacity.
Minimum one year hotel related work experience is an advantage.
