What will you do:

Reporting to the Executive Chef, core job responsibilities and functions include but are not limited to:

Responsible for maintaining a high level of consistency in delivering quality food products and competitive dining costs and ensuring that the F&B direction aligns with the hotels vision and the F&B brand vision
– Provide consistently professional, friendly and proactive guest service with the support of fellow colleagues
– Opening a line for dialogue and communication with the Executive Chef and Head Chef
– Department scheduling, per business and productivity forecast in Payroll and T&A management system
– Monitoring department stock in conjunction with food stores
Monitor and monitor department productivity on a daily basis and filter exceptions
Maintain department standards as determined by the Executive Chef
– Develop new menu items to ensure the offering is ahead and on top of global trends
– Acquiring new products to ensure we are recognized as a food and beverage destination while training the culinary team on the latest technology
Ensure that the kitchen work area is clean and tidy and that the equipment is working
All malfunctioning equipment is reported to the immediate supervisor or manager as a way to reduce work-related accidents
Maintain good contact with F&B outlets and communicate any concerns, comments or suggestions
Create all new food production requirements for the kitchen department
– Daily order for all food production requirements of the department on Birch Street
Enhancing teamwork between the kitchen and all other departments, especially the food and beverage service staff
– Responsible for running the kitchen in the absence of the Executive Chef and Executive Chef
Responsible for ensuring each employee operates effectively and efficiently as well as improving employee morale and relationships
To act as a team leader and take responsibility for staff development, teaching and explaining new recipes and procedures
Adheres to the existing engineering program
– employee performance reviews, career guidance and training
– Holding departmental meetings
Comply with all safety regulations for assigned duties, ensuring a clean and safe working environment while actively participating in the hotel’s health and safety program
Adhere to and follow ALLSAFE’s health and safety protocols, and ensure all colleagues are trained and held accountable for the standards set

Your experience and skills include:

– 8-10 years of culinary experience including high-end luxury hotels
– At least 10 years of experience in the pastry and baking industry with an extended period of time in all areas of pastry and baking
– You should be able to make chocolate bars and sugar
Must have a Red Stamp Certificate (Traveler’s Papers) or its international equivalent
He has knowledge of how to work with sugar, chocolate, marzipan, wedding cakes and all aspects of bakery.
– Worked with a paste-coated. Danish dough, croissant dough, puff pastry dough capable of forming danish and croissant
Has the ability to understand the cost of food and the cost of labor

– Knowledge of HACCAP
