Hotel Overview: The Makkah Clock Royal Tower, a Fairmont hotel, is only a few steps away from the Holy Mosque and the Kaaba. One of the tallest hotels in the world, this 76-storey hotel is the focal point of the Abraj Al Bait complex, part of the King Abdulaziz Endowment Project. The hotel’s genuine hospitality is seen throughout the 858 rooms.

Reporting to the Hotel Manager, the Food and Beverage Manager is responsible for the overall success of the F&B division, which includes the performance of our nine outlets as well as in-room dining, in-room refreshment center, banqueting, kitchen and grooming operations. The successful candidate must be dynamic, enthusiastic and passionate about food and beverages. Will maximize sales and profits as well as guest satisfaction and employee engagement while adhering to applicable company policies and standards. Will form a close working relationship with Executive Committee members and department heads. Demonstrated ability to increase revenue, accurately forecast and enhance profitability as well as coaching and leadership development talent is a prerequisite.

Summary of responsibilities:

Reporting to the Hotel Manager, the primary responsibilities and functions include but are not limited to the following:

The Food and Beverage Manager’s job is to plan and direct the hotel’s food and beverage operations to ensure a balance between providing excellent service to guests, maximizing profitability and supporting the development of all colleagues to reach their highest potential.
Actively participate in Executive Committee and Revenue Department meetings.
A key member of the leadership and crisis management team.
Assist in the preparation, presentation and subsequent completion of the hotel business plan, which includes the annual operating budget, marketing plan, sales and capital budget as well as the strategic plan.
Ownership and implementation of the hotel’s strategic plan and accompanying tactics for success.
Ensure the development and accuracy of monthly, quarterly and annual financial forecasts for the Food and Beverage Division.
Set and monitor staffing levels and productivity targets with a view to ensuring a balance between service and profitability.
– Coordinating the planning and implementation of capital projects for food and beverages.
– Lead by example sets our service up and ensures that all reporting departments focus heavily on delivering our service essentials.
Ensure the highest guest service satisfaction results by monitoring and analyzing JD Power reports and implementing appropriate action plans.
Ensure full compliance with hotel operating controls and seek innovative ways to improve performance on a regular basis.
Develops menus, promotions, specifications and standards for all food and beverage operations.
Work with the F&B team to develop signature services for each outlet and banquet management.
Look for opportunities to create awareness and positioning through community participation and exposure in local media.
Ensure smooth operation and coordination of food and beverage operation divisions through concerned division heads.
Active participation in the recruitment process for all Food and Beverage positions to ensure that the best candidates are hired.
Support, direct, direct and develop department heads and managers in providing direction.
Ensure regular and effective communication with all F&B colleagues through daily briefings, networking meetings with individual departments, development of Vermont Fundamentals and daily interaction across all departments.

qualifications:

5 to 7 years of progressive management experience in hotel, restaurant and operations management.
Degree/Diploma from a recognized Hotel and Restaurant Management programme.
– Excellent interpersonal skills and team player behavior.
– Knowledge of Microsoft systems, Microsoft Word, Excel and Outlook.
Excellent knowledge of cooking and beverages.
Familiarity with general accounting principles and policies.
Ability to analyze data and trends and develop strategies for improvement.
Innovative, creative and willing to take risks.
Results-oriented with the ability to be flexible and work well under pressure.
Bilingual in the two official languages ​​is an asset.
