What will you do:
Maintenance and cleaning of all food and beverage services and kitchen equipment.
Direct all subordinate employees and perform their functions in accordance with Sofitel policies and procedures
Achieving financial goals by reducing costs without compromising in the case of cleanliness.
– Implementing policies and procedures in the operation of the supervision department
Ensure adequate operating equipment and cleaning supplies for the operation.
Responsible for managing, operating and coordinating the supervision department
Provide functional assistance for operation during peak periods and jobs.
Ensure that the supervision department is covered by employees during operation.
Establishing standards for cleaning and store keeper procedures in line with company policies.
Achieve the objectives set in the key results area in the annual PDR.
Maintain stock book of food, beverage and kitchen equipment in cooperation with the storekeeper.
Maintaining all materials and kitchen utensils in good condition and following engineering in case of repair.
Coordinate general supply status and keep good stock on hand
Conduct physical inspections of kitchen preparation and storage areas to ensure that sanitation standards are consistently achieved.
Management of pest control and hygiene in the kitchen.
– Designing and developing (implementation-oriented) training programs for food handlers.
To train food handlers in conjunction with department heads / process owners and improve the overall efficiency of food handlers.
Provide technical guidance on relevant food safety concerns and improve operations.
To organize laboratory tests based on specific requirements and interpret results to facilitate implementation and communication of corrective actions.
To raise the level of product safety, by adapting to the most stringent specifications based on internationally recognized standards / industry best practices.
To conduct periodic hygiene audits/inspections, and spot checks as required.
– To perform supplier audits and assist with supplier approval and performance monitoring.
Coordinate the formulation of standard operating procedures by various departments, when necessary.
To stay current on current trends and events in food safety and hygiene matters, including legal requirements.
Your experience and skills include:
– 5-7 years experience
– Good English
– Strong attention to detail
Strong interpersonal and problem solving abilities
Working knowledge of equipment and associated chemicals
Excellent communication, leadership and teaching skills, full understanding of all department operations
– Must be able to calculate labor costs
Must be proficient in scheduling employees who meet business needs
